Learning the rules to prepare a perfect espresso

Excellent Espresso Duration: 1 full day (from 9.30 a.m. to 5 p.m., with a 1-hour lunch break). 

 Place: Planet Coffee.

Aimed at: Planet Coffee’s distributors, baristas and pub/bar managers.
Activities: lessons and practical exercises in a tasting room.
Teaching aids: coffee station, espresso machine, grinder-doser, blender, various accessories, green and roasted coffee samples, coffee blends, videos, handouts, tasting and assessment forms, IBEA manual. 

Contents

Theoretical part

The history of espresso: development of Italian technology for espresso coffee.
Italian espresso: the theory behind an excellent espresso: definitions, parameters, characteristics.
The raw materials: blends, features, types and storage.
The equipment: grinder-doser, espresso coffee machine and softener, various work systems and technical features.
The barista: the “golden rules” of espresso, techniques for serving, checking, management and maintenance.
Perfect extraction: perfect extraction and causes for defects in the cup.
Champion’s espresso: WBC World Barista Championship espresso assessment form.

Practical part

Practice: setting, calibration, dispensing.
Preparation test: according to WBC rules.
Tasting: session where different blends and single-origin coffees are tasted.

Objectives:
To provide the basic knowledge and techniques needed to obtain an excellent espresso.
To spread the culture of high quality espresso.
To improve the participants’ expertise and knowledge.
To promote training and refresher courses, helping participants improve the quality of the products and services they offer.

Diploma
At the conclusion of the course, those passing the final test will receive an IBEA diploma certifying attendance at the course.
